DIRECTIONS: • 6 -- corn tortillas • 2 Tbs oil • 3 -- chicken breasts, diced • 1 Tbs chili powder • 1 -- bell pepper, chopped • 1/2 jar Pueblo Chile Fire Roasted Gourmet Salsa • 1 -- medium onion, chopped • 1 C cheddar cheese, grated • 1 can cream of mushroom & chicken soup (or 1/2 can of each) Lightly fry tortillas in oil and set aside. Brown the chicken breast and drain. Saute bell pepper and onion in oil and remove from heat. Mix together chicken, bell pepper, onion, soup, chili powder, and Pueblo Chile Salsa. Spoon a small amount of salsa in bottom of a 2 quart casserole. Line with half of the tortillas, and top with 1/2 of the chicken mixture. Repeat layers and top with cheese. Bake at 350 degrees for 45 minutes. Serves 4-6.
