This salsa was created by the Lewis family. They first made their salsa for friends and family, then decided to take the plunge and produce the salsa on a larger scale so more folks could enjoy it. Both Jill and Kevin Lewis have been in the restaurant business for the past 25 years. Kevin's love for chiles is expressed at work, where he is chef and kitchen operations manager for a popular Texas Tex-Mex restaurant. His home garden is full of a variety of chiles, which he uses to create exciting new dishes. This salsa is one of the smoothest salsa verdes we've found. (Most salsas made with tomatillos have a bitter edge to them.) The secret to the smooth taste of this salsa verde is a special blend of roasted tomatillos, serrano peppers and onions.
